Of course, as you are the best and most experienced driver, your salary will be the highest one, but after a while trained drivers may bring you even up to several thousand euro daily. Note about Steam vs. ETS2 vanilla profiles: I believe the only difference is going to be that Steam saves are stored in the Steam directory on your PC vs. Documents/Euro Truck Simulator 2, and their corresponding folders are labelled profiles vs. steam_profiles. Otherwise, their innards including save folders etc. should be exactly the same.
